DuBreton Organic Pork Back Ribs (Full Rack) Priced by Weight

The ribs come from the side or back. The meat, located between the bones, remains tender during cooking.
Preparation
- In a saucepan, place the ribs, cover with water, add herbs and season.
- Bring to a boil and cook for 45 minutes to 1 hour or until the bones easily detach from the meat.
- Drain the ribs well and coat with your favourite sauce.
*For more flavour, marinate cooked ribs in sauce 24 hours before cooking.
Baking in the oven
- Preheat the oven to 230 °C (450 °F).
- Cook the ribs for 10 to 12 minutes on a baking tray covered with parchment paper.
- Cut between the bones to share the back ribs.
Barbecue cooking
- Preheat the barbecue to medium-high.
- Cook the ribs for 10 to 12 minutes, turning to grill on all sides.
- Cut between the bones to share the back ribs.
Baking completely in the oven
- Place the ribs in a large ovenproof dish and coat with your favourite sauce.
- Bake in the oven at 190 °C (375 °F), covered, for 1 hour.
- Remove the lid, brush the back ribs and continue cooking for 30 minutes or until the bones easily detach from the meat.
- Cut between the bones to share the back ribs.
Cooking tips
- Always remove the thin membrane from the underside of the ribs as it will toughen as it cooks, and acts as a barrier, preventing any sauces you baste with from reaching the meat. Detach one corner of the membrane carefully with a knife then pull it off all the way; it should come off in one clean piece.
- Precooking and boiling ribs is not necessary when you use duBreton Pork Back Ribs. If you do prefer to precook your ribs before putting them on the grill, apply a dry rub and cook them meaty side up and covered tightly with aluminum foil, in the oven or on the barbeque at 350 ˚F for 1-1.5 hours. Then place them directly on the grill over medium heat, turning and brushing them every 20 minutes until the meat turns a beautiful mahogany color. You can pre-cook the ribs and refrigerate them for up to three days before finishing cooking on the grill.
- When cooking ribs (without pre-cooking), place them in indirect heat. Preheat the grill to 250 ˚F, turn off the heat on one side place the ribs on that side, lid closed for about 30 minutes. Then start turning and brushing every 20 minutes, always closing the lid, for 1 1/2 to 2 hours.
