At the same time, it is very delicately flavoured, and benefits from marinating in an umami-rich blend: we suggest a mix of salt, fresh-ground pepper, tamari, minced fresh garlic, and crushed anchovies, applied the night before serving. Then use the reverse sear method to get the perfect interior doneness throughout, and a richly toasted exterior crust.
